Preparation

  • In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Mix these dry ingredients together well.
  • In another bowl, whisk together the eggs, milk, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined.

Cooking

  • Heat oil in a deep fryer or large pot to 365°F (185°C).
  • Drop spoonfuls of batter into the hot oil, frying in small batches until golden brown, about 2-4 minutes.
  • Remove the beignets and place them on paper towels to drain excess oil.
  • Dust your beignets with powdered sugar before serving.
