  • 1/2 cup red onion, cut into thin wedges Contributes depth to the toppings.

  • 1/2 cup pitted Kalamata olives, halved lengthwise Their briny taste complements the other ingredients.

Cheese

  • 2 to 3 cups shredded low-moisture part-skim mozzarella cheese Melts into gooey perfection.
  • 1/2 cup finely grated Parmesan cheese (optional) Adds an extra layer of cheesy goodness.

Optional Toppings

  • 1/2 cup sliced almonds (optional) For a nutty crunch.

Instructions
 

Preparation

  • Preheat your oven to 500°F with a rack in the upper third. If using a baking stone, place it on the rack.
  • If using store-bought dough, follow package instructions. For homemade dough, roll it out to about ¼ inch thick and place on a pizza peel dusted with cornmeal or flour.
  • Spread the pizza sauce evenly over the dough, leaving a 1-inch crust around the edges.
  • Distribute the fresh baby spinach over the sauce.
  • Sprinkle the shredded mozzarella cheese generously over the spinach.
  • Add the artichokes, bell peppers, red onion, cherry tomatoes, and Kalamata olives on top. Optionally, sprinkle with sliced almonds.

Baking

  • Bake for about 10 to 12 minutes or until the crust is golden brown and the cheese is bubbly.
  • Let the pizza cool slightly before garnishing with fresh basil, red pepper flakes, and Parmesan cheese if desired.

Notes
