Preparation

  • In a large skillet over medium-high heat, pour in the olive oil and wait until it shimmers.
  • Season the shrimp with salt and pepper, add to the skillet, and sear until golden (about 2 minutes). Flip and cook until opaque; set aside.
  • Reduce heat to medium and melt the butter. Stir in the minced garlic.
  • Add the halved cherry tomatoes, seasoning with salt and pepper, and cook until they begin to burst.
  • Toss in the baby spinach and let it wilt.
  • Stir in the heavy cream, Parmesan, and basil; simmer until thickened.
  • Return the shrimp to the skillet, stir to combine, and heat through. Garnish with additional basil and a squeeze of lemon before serving.
