For the Sandwiches

  • 8 slices multigrain bread or sandwich bread of choice Pick your favorite type, preferably something that toasts well.
  • 8 slices cheddar cheese Offers richness and satisfying creaminess.
  • 2 tablespoons unsalted butter, divided Essential for achieving a golden-brown crust.

Preparation

  • In a medium bowl, combine the drained tuna, minced celery, minced shallot, Greek yogurt, lemon zest, Dijon mustard, salt, black pepper, and chopped parsley. Use a fork to flake the tuna and stir everything until well mixed.

Assembling

  • Lay out the eight slices of your chosen bread. Top each slice with a slice of cheddar cheese. For four of the slices, add about 1/2 cup of the prepared tuna salad on top of the cheese.

Cooking

  • Heat a skillet over medium-low heat and add 1 tablespoon of butter, allowing it to melt. Place two sandwiches in the skillet, ensuring they are well spaced. Cook for about 2 to 3 minutes on each side, or until golden brown and the cheese has melted.
  • With the remaining tablespoon of butter, cook the remaining sandwiches, following the same method.

Serving

  • Serve the sandwiches warm, ideally accompanied by a fresh salad or a warm bowl of soup.

Notes

For additional flavor, consider adding a dash of hot sauce or diced pickles to the tuna salad. For a lighter version, substitute Greek yogurt for low-fat mayonnaise. Variations include mixing in diced bell peppers or sweet corn into the tuna salad.
