  • 2 tsp cumin Essential for that authentic flavor.
  • 1 tsp oregano Elevates the dish with its freshness.
  • 1/2 tsp ground cloves Brings a hint of warmth and sweetness.
  • 1/2 tsp ground cinnamon Enhances the complexity of flavors.
  • 4 cups beef broth Rich and savory, the foundation of the stew's sauce.
  • 2 tbsp vinegar Brightens up the flavors.
  • Salt and pepper to taste The finishing touch that brings the flavors together.

For Serving

  • Corn tortillas Soft and warm tortillas to soak up the savory broth.

Instructions
 

Preparation

  • Toast the dried guajillo and ancho chiles in a skillet over medium heat for 2–3 minutes. Remove stems and seeds.
  • Blend toasted chiles, garlic, onion, cumin, oregano, ground cloves, ground cinnamon, and 1 cup beef broth until smooth.
  • Season beef with salt and pepper, then sear in oil over medium-high heat until browned.
  • Pour the chili sauce over the beef, add remaining beef broth and vinegar, and stir. Bring to a simmer.

Cooking

  • Cover and simmer on low heat for 2–3 hours until beef is tender.
  • Shred the beef and stir it back into the broth.

Serving

  • Serve with warm corn tortillas, garnished with fresh cilantro and diced onion.

Notes

To enhance your stew, let it simmer longer for more flavor, add lime juice for freshness, or incorporate spicy ingredients for a kick. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to three months.
