Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat. When shimmering, fry the tortillas for about 2 minutes per side until golden and crispy. Drain on paper towels.
  • In the same skillet, remove excess oil, add ground beef, sprinkle with taco seasoning and a splash of water. Cook for about 5-7 minutes, breaking up the meat until browned and saucy.

Assembly

  • Spread a layer of refried beans on one crispy tortilla, add a portion of seasoned ground beef, drizzle with enchilada sauce, and sprinkle with shredded cheese.
  • Top with another tortilla and repeat layering with beans, beef, sauce, and cheese.

Baking

  • Place the assembled pizza layers on a baking sheet. Bake in a preheated oven at 375°F (190°C) for about 10 minutes, until the cheese is bubbly and lightly browned.

Serving

  • Remove from oven and top with diced tomatoes, sliced green onions, and jalapeños. Serve hot with sour cream or guacamole.
