Corn Preparation

  • 2 cobs fresh corn cobs, cut into 4 strips each Opt for fresh corn for best flavor
  • 1 tablespoon smoked paprika Provides a rich, smoky flavor
  • 1 tablespoon olive oil Offers a luscious, fruity taste
  • 1 pinch salt To taste
  • 1 pinch pepper To taste
  • 1 pinch dried thyme Adding an aromatic herbal touch

Dressing

  • ½ onion red onion, finely diced For a hint of sweetness and texture
  • ½ chili red chili, finely chopped Adjust to taste for heat
  • ½ lime juice of To give a refreshing zing
  • 3 tablespoons olive oil For the dressing to enhance richness
  • 1 pinch salt To taste
  • 1 pinch pepper To taste
  • handful fresh parsley and basil, chopped For a bright, herbal finish

Instructions
 

Preparation

  • Preheat your oven to 200ºC (fan).
  • Carefully slice each corn cob into four lengthwise strips, revealing the beautiful kernels.

Baking

  • Place the corn strips on a baking tray and brush them with olive oil.
  • Sprinkle smoked paprika, salt, pepper, and thyme evenly over all sides. Toss gently to coat.
  • Bake the corn for 25 minutes, flipping halfway through to ensure even cooking.
  • After 25 minutes, bake for an additional 18-20 minutes until golden brown.

Dressing Preparation

  • While baking, mix together red onion, chili, lime juice, 3 tablespoons olive oil, salt, pepper, parsley, and basil in a bowl for the zesty dressing.

Serving

  • Once the Sweetcorn Ribs are done, drizzle the lime-chili dressing over them.
  • Serve warm, and enjoy the delightful flavors!
