For the salmon and vegetables

  • 4 pieces salmon fillets (about 6 oz each) Tender and flaky, perfect for absorbing the glaze.
  • 1 tbsp olive oil (for salmon) Adds richness.
  • 1 lb broccoli florets A nutritious addition.
  • 2 pieces carrots, sliced Adds slight sweetness.
  • 1 piece red bell pepper, sliced Provides color and flavor.
  • 1 tbsp olive oil (for vegetables) Ensures even roasting.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the honey, Dijon mustard, soy sauce, apple cider vinegar, and minced garlic until smooth.
  • Place the salmon fillets on one side of the prepared baking sheet and spoon the glaze evenly over them.
  • In a separate bowl, toss the broccoli, carrots, and bell pepper with olive oil, salt, and pepper until well-coated.
  • Spread the vegetables on the other side of the baking sheet.

Cooking

  • Bake for 15–18 minutes until the salmon flakes easily with a fork and the vegetables are tender and slightly charred.
  • Optional: Broil for the last 2 minutes for extra caramelization.
  • Garnish with freshly chopped parsley or dill before serving.
