Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  • In a large bowl, combine the mashed sweet potatoes, heavy cream, sugar, egg yolks, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  • Pour the mixture into the prepared baking dish and smooth the top with a spatula.

Baking

  • Bake for 30-35 minutes or until the center is set and a toothpick comes out clean.
  • Once cooled, sprinkle a thin layer of sugar evenly over the top.

Caramelizing and Serving

  • Use a kitchen torch to caramelize the sugar until golden and crispy.
  • Allow to cool slightly before slicing into bars. Serve and enjoy!

Notes

Ensure sweet potatoes are well-cooked and mashed smoothly. If no kitchen torch is available, use a broiler to caramelize the top. Consider adding orange zest for extra flavor.
