  • 1 1/2 cups beef broth Provides liquid and flavor.
  • 1 cup basmati rice Absorbs savory juices.
  • 2 cups shredded pepper Jack cheese Creamy and spicy topping.
  • 1 Tbsp finely chopped fresh cilantro Garnish for freshness.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large Dutch oven over medium heat, pour in the olive oil.
  • Add the ground beef and cook for about 4 to 6 minutes until fully browned, breaking it apart as it cooks.
  • Incorporate the chopped bell peppers, onion, and sliced garlic into the pot. Season with kosher salt, black pepper, cumin, smoked paprika, and oregano, stirring for about 1 minute until fragrant.
  • Add the tomato paste and cook for an additional 2 minutes, stirring.
  • Stir in the fire-roasted diced tomatoes, beef broth, and basmati rice, scraping up any brown bits from the bottom.
  • Increase the heat to high and bring the mixture to a boil.
  • Cover the pot and transfer it to the preheated oven. Bake for 20 to 24 minutes, or until the rice is tender.

Finishing Touches

  • Remove the casserole from the oven and set your broiler to high.
  • Stir the casserole and sprinkle the shredded pepper Jack cheese generously on top.
  • Return it to the oven, uncovered, and broil for about 3 to 4 minutes until the cheese is golden brown and bubbly.
  • Remove from the oven and top with finely chopped fresh cilantro.

Notes

For a vegetarian option, swap the ground beef for lentils and increase the variety of vegetables. You can also use different cheeses for varied flavors. Store leftovers in an airtight container for up to three days or freeze for up to three months.
