Ingredients
  

Zucchini Boats

  • 4 medium medium zucchinis For creating the boats.

Stuffing

  • 1 cup ricotta cheese Creamy and rich.
  • 2 cups fresh spinach Chopped.
  • 1 cup mushrooms Diced.
  • 1/2 cup grated Parmesan cheese For added flavor.
  • 1 clove garlic Minced.
  • 2 tablespoons olive oil For sautéing.
  • a pinch salt For seasoning.
  • a pinch pepper For seasoning.
  • 1 teaspoon Italian seasoning For added warmth.
  • 1/2 cup marinara sauce Optional, for a tangy finish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out the centers to create 'boats.'

Sautéing

  • In a skillet, heat the olive oil over medium heat. Add minced garlic and diced mushrooms, and sauté until softened.
  • Add chopped spinach and cook until wilted, seasoning with salt, pepper, and Italian seasoning.

Filling and Baking

  • In a mixing bowl, combine sautéed vegetables with ricotta cheese and half of the grated Parmesan. Mix well.
  • Fill each zucchini boat with the ricotta mixture and arrange in a baking dish.
  • Spoon marinara sauce over the filled zucchinis, if using, and sprinkle with remaining Parmesan.
  • Bake for 25-30 minutes until zucchini is tender and cheese is golden brown.
  • Allow to cool for a few minutes before serving.

Notes

For a deeper flavor, consider adding a splash of lemon juice to the ricotta mixture. You can also experiment with different cheeses, such as mozzarella or feta. If you want to make it ahead, the stuffing can be prepared a day in advance; just fill the zucchini boats right before baking. Adding a pinch of red pepper flakes may elevate the dish further.
