  • 1 lb boneless, skinless chicken thighs Diced for tenderness

  • 4 cloves garlic Minced
  • 1 can (14.5 oz) diced tomatoes For texture and tang
  • 6 cups chicken broth The foundation of the soup
  • 1 cup long-grain rice Adds heartiness
  • 2 cups okra Sliced, thickens the soup
  • 2 teaspoons Cajun seasoning Key flavor ingredient
  • 1 teaspoon dried thyme Balances flavors
  • 1 teaspoon smoked paprika Adds smoky flavor
  • 1/2 teaspoon cayenne pepper For additional heat
  • 2 tablespoons olive oil For sautéing

Instructions
 

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, add the diced chicken thighs, seasoning with salt and pepper, and cook until browned, approximately 5-7 minutes. Remove and set aside with the sausage.
  • Add onion, bell pepper, and celery to the pot, sautéing until softened, about 5 minutes.
  • Stir in the garlic and cook for an additional minute.

Cooking

  • Return sausage and chicken to the pot.
  • Stir in the diced tomatoes, chicken broth, rice, okra, Cajun seasoning, thyme, smoked paprika, and cayenne pepper.
  • Bring to a boil, then reduce to a simmer.
  • Cover and let it simmer for 25-30 minutes, stirring occasionally, adding more broth as needed.

Serve

  • Taste and adjust seasoning with salt, pepper, or Cajun seasoning as desired.
  • Serve in bowls, garnishing with sliced green onions and parsley.
  • Offer lemon wedges on the side.

Notes

Use high-quality, fully smoked Andouille sausage for better flavor. Adjust cayenne pepper to your heat preference. Incorporate fresh lime juice before serving for added zest. To thicken the soup, use more rice or let it absorb more liquid.
