  • Begin by heating the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and chopped bell pepper, cooking until the peppers are soft.
  • Increase the heat to medium-high and add the ground beef. Cook until it’s browned, breaking it apart with your spatula.
  • Sprinkle in the chili powder, cumin, and paprika, stirring to coat everything thoroughly.
  • Stir in the diced tomatoes along with their juice and the long grain white rice. Mix well.
  • Pour in the beef broth or water, bringing it all to a boil. Once boiling, reduce the heat to a simmer.
  • Cover the skillet and let it simmer for 18-20 minutes.
  • Remove from heat and let sit, covered, for a few minutes. Fluff the rice with a fork and garnish with cilantro before serving.

Notes

For a healthier twist, consider using lean ground turkey or plant-based meat alternatives, and substitute white rice with brown rice.
