  • 2 medium Onions (Sliced) Render sweet undertones as they cook.
  • 4 cloves Garlic (Minced) Adds depth to the overall flavor profile.
  • 1 tablespoon Fresh Rosemary (or dried) Elevates the dish with earthy notes.
  • 1 tablespoon Fresh Thyme (or dried) Enhances the flavors with herby essence.
  • Salt and Pepper Essential seasonings to enhance flavor.

Instructions
 

Preparation

  • Generously season the chuck roast with salt and pepper.
  • In a hot skillet, heat some olive oil and sear the roast on all sides until it develops a deep brown crust (optional).
  • Layer chopped carrots, sliced onions, and halved potatoes in the slow cooker.
  • Place the seasoned roast on top of the vegetables.
  • In a bowl, mix the beef broth, minced garlic, rosemary, and thyme. Pour over the roast and vegetables.

Cooking

  • Cover the slow cooker and set it to low for 7-8 hours or high for 4-5 hours.
  • Once cooked, let the roast rest for about 10 minutes before slicing.

Serving

  • Serve the pot roast alongside the aromatic vegetables and spoon some broth over the top.

Notes

For added depth, consider adding balsamic vinegar or Worcestershire sauce to the broth. If you like a thicker gravy, thicken the broth with a cornstarch slurry before serving. Leftovers can be used in sandwiches or soups.
