Ingredients
  

Macaron Shells

  • 70 grams almond meal/flour Base of the macarons, giving tender texture.
  • 120 grams powdered sugar Adds sweetness and creates a smooth mixture.
  • 2 large egg whites Essential for perfect meringue consistency.
  • 50 grams granulated sugar Stabilizes egg whites while whipping.
  • 1/4 cup freeze-dried raspberries Provides natural flavor and color.

Raspberry Buttercream

  • 3/4 cup fresh or frozen raspberries Provides juicy, tart raspberry essence.
  • 2 tblsp granulated sugar Sweetens the raspberry flavor.
  • 1 tblsp lemon juice Balances the flavors with bright acidity.
  • 6 tblsp unsalted butter Creates a rich and creamy texture for the filling.

Instructions
 

Preparation

  • Line a baking sheet with parchment paper or a Silpat mat.
  • In a food processor, combine almond meal and powdered sugar. Pulse to blend and sift into a bowl.
  • In a separate bowl, whip egg whites until foamy, then gradually add granulated sugar and whip to stiff peaks.
  • Fold the sifted almond mixture into the whipped egg whites until smooth.
  • Pipe small circles onto the prepared baking sheets and dust lightly with raspberry powder.
  • Allow the piped macarons to rest for 30 minutes to develop a skin while preheating the oven to 300°F (150°C).

Baking

  • Bake the macarons for 15 minutes until set and easily lift from the parchment. Cool completely.

Buttercream Preparation

  • Simmer the raspberries, sugar, and lemon juice until raspberries break down, then strain and let cool.
  • Beat room-temperature butter until fluffy; gradually add cooled raspberry syrup until smooth.

Assembly

  • Pipe buttercream on half of the macaron shells and sandwich with the other half.

Notes

Use a kitchen scale for precise measurements. Sift dry ingredients to avoid lumps and ensure smooth batter. Allow macarons to rest for proper texture.
