  • 1 medium medium onion, chopped For aromatic sweetness

  • 1/2 cup butter For richness
  • salt and pepper To taste
  • 1 cup shredded cheddar cheese For serving

Preparation

  • In a large pot over medium heat, melt the butter until fragrant.
  • Add the chopped onion and sauté until translucent.
  • Toss in the diced potatoes and chicken broth, bringing the mixture to a boil.
  • Once boiling, reduce the heat and simmer until the potatoes are tender (15-20 minutes).
  • Mash some of the potatoes against the sides of the pot.
  • Stir in the heavy cream, seasoning with salt and pepper.
  • Serve hot, topping each bowl with shredded cheddar cheese and a sprinkle of green onions.

Notes

Consider adding crispy bacon or diced jalapeños for added flavor. This soup is great with a crisp side salad or baguette.
