Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Incorporate the egg and vanilla extract, mixing well until fully combined.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  • Make an indentation in the center of each ball using your thumb.

Baking

  • Bake for 10-12 minutes until the edges are set but the centers remain soft.
  • Melt the chocolate chips with the coconut oil in a microwave-safe bowl until smooth.
  • Spoon the melted chocolate into the center of each cookie and sprinkle with crushed peppermint candies.

Serving

  • Allow the chocolate to set before serving.

Notes

For extra peppermint flavor, consider adding a drop of peppermint extract to the chocolate filling. You can also drizzle white chocolate over the cookies for decoration.
