  • 1 can Cooking spray For greasing the baking pan

Preparation

  • Preheat the oven to 350°F. Grease a 13x9 inch metal baking pan with cooking spray, then line it with parchment paper, allowing overhang on two long sides. Grease the parchment with cooking spray.
  • In a large bowl, using a handheld electric mixer on medium-high speed, beat together brown sugar, butter, peanut butter, baking powder, vanilla, and salt until well combined.
  • Add the eggs one at a time, mixing on low speed after each addition until just incorporated.
  • Fold in the flour until only a few streaks remain. Be careful not to overmix.
  • Gently fold in 2 cups of pretzels and 2/3 cup of butterscotch chips until well mixed.
  • Scoop the batter into the prepared pan, spreading it evenly.
  • Press the remaining 1/2 cup of pretzels into the top of the batter and sprinkle with the remaining 1/3 cup of butterscotch chips.
  • Bake for 23 to 27 minutes, until a tester inserted into the center comes out clean.
  • Let cool completely before using the parchment overhang to lift the blondies out of the pan. Transfer to a cutting board and cut into squares.

Notes

For extra flavor, consider adding a pinch of cinnamon or experimenting with different types of nuts or chocolate chips. These blondies are perfect for gatherings or as an afternoon snack with coffee or tea.
