  • 4 slices slices of hearty, rustic bread Choose a loaf with a crunchy crust and soft interior.
  • 4 oz creamy goat cheese Softened goat cheese adds a tangy richness.
  • 1/2 cup robust olive tapenade This blend of olives brings deep, savory flavors.

Optional Additions

  • 1 handful Fresh arugula or spinach Enhances flavor with a peppery note and adds freshness.

Instructions
 

Preparation

  • Spread a generous layer of olive tapenade on two slices of bread.
  • On the remaining two slices, spread the goat cheese evenly.
  • If using, add a layer of fresh arugula or spinach on top of the goat cheese.
  • Close the sandwiches with the tapenade-covered slices and press down gently.
  • Heat a skillet over medium heat and add a little olive oil.
  • Place the sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes.
  • Flip the sandwiches and cook the other side until golden and cheese is slightly melted, about another 3-4 minutes.
  • Remove from the skillet, slice in half, and serve warm.

Notes

To elevate your sandwich, consider trying different breads, flavored olive tapenades, or adding nuts. Drizzle with balsamic reduction for an extra fresh touch.
