Preparation

  • Grease a 9-inch pie dish with cooking spray.
  • In a large bowl, combine graham cracker crumbs, melted butter, granulated sugar, and kosher salt. Stir until mixed into a sandy texture.
  • Press the mixture into the bottom and sides of the prepared pie dish to form the crust.

Caramel Layer

  • In a medium bowl, mix the caramel sauce and chopped pecans.
  • Spread the caramel-pecan mixture evenly over the crust and sprinkle with flaky sea salt.
  • Refrigerate the pie for at least 1 hour.

Banana and Pudding Layer

  • Arrange banana slices on top of the caramel layer.
  • In another bowl, whisk together the instant vanilla pudding mix and whole milk until thickened.
  • Beat heavy cream in a separate bowl until stiff peaks form.
  • Gently fold 1 cup of whipped cream into the pudding mixture.
  • Spread the pudding mixture over the banana layer, smoothing the top.

Chilling and Serving

  • Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  • Before serving, spread reserved whipped cream on top and drizzle with caramel sauce. Add more pecans if desired.

Notes

Use ripe but firm bananas to prevent browning. Toast pecans for a stronger flavor. Optional: Add dark chocolate shavings or a sprinkle of cinnamon for variation.
