Preparation

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • Prepare the brownie mix according to package instructions and spread it evenly in the pan. Bake for 20 minutes and allow it to cool slightly.
  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy for about 2-3 minutes.
  • Add the egg and vanilla extract, mixing well until combined. Gradually stir in the flour and salt, then fold in 1/2 cup of mini chocolate chips.
  • Press the cookie dough layer evenly over the cooled brownies.
  • In a saucepan over low heat, combine white chocolate chips and sweetened condensed milk, stirring until smooth.
  • Stir in the peppermint extract and optional food coloring, then fold in the remaining mini chocolate chips.
  • Pour this creamy mixture over the cookie dough layer and spread evenly.

Cooling

  • Refrigerate for at least 2 hours or until firm. Once set, lift the fudge out using the parchment paper and slice into squares.
