Instructions
 

Preparation of Beans

  • Rinse the dried pinto beans under cold water to remove any dust or impurities. Soak either overnight with 6 cups of water or use the quick soak method by boiling for 2 minutes, then letting it sit for an hour.
  • Drain and rinse the soaked beans. Return them to the pot, add fresh water, and boil. Reduce heat and simmer for 1 to 1.5 hours until tender. Reserve 1 cup of bean broth for later.

Cooking the Refried Beans

  • In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add finely chopped onion and cook until translucent.
  • Add garlic and sauté until fragrant, about 30 seconds.
  • Add cooked beans and a splash of reserved bean broth to the skillet. Mash beans with a potato masher or fork until creamy. Incorporate more broth for a smoother texture.
  • Add chiles de árbol and adjust seasoning with sea salt. Cook for another 5-10 minutes to meld flavors.
  • Remove from heat and serve hot.

Notes

For enhanced flavor and texture, soak beans overnight. Add sour cream or queso fresco before serving. Adjust thickness with more reserved broth or water if necessary. Experiment with spices like cumin or smoked paprika.
