  • 0.5 tablespoon cumin Earthy and warm.
  • to taste salt and pepper Essential seasonings.
  • 1 15 oz can black beans, drained and rinsed Creamy and nutritious.
  • 1 small red onion, diced Adding depth to the filling.
  • 1 cup corn kernels (fresh or frozen) Balancing the dish with sweetness.
  • 2 cloves garlic, minced Infusing the dish with aroma.
  • 1 15 oz jar salsa (mild or spicy based on preference) Ties all the flavors together.

For the assembly

  • 4 cups shredded cheddar cheese (freshly grated recommended) Creating a gooey, melty topping.
  • 12 8-inch corn tortillas Layering each flavor.

Preparation

  • Preheat your oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with cooking spray and set it aside.
  • In a large skillet over medium-high heat, add olive oil until shimmering. Add ground beef, chili powder, coriander, cumin, salt, and pepper. Break up the beef with a wooden spoon and cook for about 5 minutes until browned.
  • Stir in the black beans, red onion, red bell pepper, garlic, and corn kernels. Cook for an additional 5 minutes until vegetables soften.
  • Reduce heat to medium-low, pour in the salsa, and simmer for about 7 minutes. Taste and adjust seasoning if necessary.
  • Layer the bottom of the prepared baking dish with slightly overlapping tortillas. Spread one-third of the beef mixture over the tortillas, followed by one-third of the shredded cheese. Repeat two more times, finishing with a layer of cheese on top.
  • Bake uncovered for 20-25 minutes until bubbling and the cheese is golden.
  • Let the lasagna rest for about 10 minutes before slicing. Serve warm with garnishes like sour cream or fresh cilantro.

Notes

For best results, use lean ground beef to avoid greasiness. Freshly grated cheese melts better than pre-shredded. Consider customizing with diced jalapeños or swapping black beans for pinto beans.
