For the Marinade

  • ½ cup cilantro, chopped Adds fresh aroma.
  • 1 teaspoon cumin powder Provides an earthy flavor.

  • tablespoons dried oregano (Mexican oregano preferred) Introduces robust flavor.
  • 2 teaspoons garlic powder (or 2 minced garlic cloves) Elevates the marinade.
  • ½ teaspoon black pepper Adds a hint of spice.
  • teaspoons salt Enhances all the flavors.

Instructions
 

Preparation

  • In a mixing bowl, whisk together the lime juice, vegetable oil, chipotle paste, chili powder, paprika, cilantro, cumin, onion powder, oregano, garlic powder, black pepper, and salt.

Marinating the Chicken

  • Place your chicken into a large resealable plastic bag or a glass dish.
  • Pour the marinade over the chicken, ensuring each piece is generously coated.
  • Seal the bag or cover the dish, allowing the chicken to marinate for at least 2 hours or, ideally, overnight.

Cooking

  • To bake, preheat the oven to 400°F (200°C). Arrange the marinated chicken on a baking sheet lined with parchment paper and bake for 25–30 minutes or until the internal temperature reaches 165°F (75°C).
  • To grill, preheat the grill to medium-high and grill the chicken for about 5–7 minutes per side.

Serving

  • Allow the chicken to rest for 5 minutes before serving to ensure juiciness.

Notes

For an extra burst of flavor, consider adding some orange juice to the marinade. If you prefer more heat, adjust the chipotle paste or chili powder to your taste. This marinade works beautifully for chicken, shrimp, or vegetables.
