Preparation

  • Preheat your oven to 425 degrees Fahrenheit.
  • In a medium bowl, season the potato slices with salt and pepper. Toss to coat evenly.
  • In a large ovenproof skillet over medium-high heat, melt the butter and olive oil together.
  • Add the seasoned potato slices to the skillet and allow them to brown on one side for about 3-5 minutes.
  • Flip the potatoes to brown the other side for an additional 5 minutes.
  • Stir in the chicken broth, garlic, rosemary, and thyme.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes until the potatoes are fork-tender.
  • Serve the melting potatoes on a platter, drizzled with the pan juices and sprinkled with extra herbs.
