Ingredients

  • 1 box 13.25-oz. box of vanilla cake mix Plus ingredients as required on the box.
  • Cooking Spray Cooking spray To grease the baking dish.

For the Blueberry Layer

  • 2.5 cups Fresh or frozen blueberries Bursting with flavor.
  • 1/2 each Juice of half a lemon For tangy brightness.
  • 1 tablespoon Granulated sugar To balance tartness.

For the Frosting

  • 2 packages 8 oz. each of softened cream cheese Creates a creamy base.
  • 1 cup Softened unsalted butter Usually two sticks.
  • 2.25 cups Confectioners’ sugar For sweetness.
  • 1 each Zest of one lemon Enhances flavor.
  • 1 teaspoon Pure vanilla extract Adds depth of flavor.
  • 1/2 each Juice of half a lemon Extra flavor for the frosting.

For Garnish

  • Fresh blueberries Fresh blueberries For presentation.
  • Lemon zest Lemon zest For decoration.

Preparation

  • Preheat the oven to 350°F (175°C) and line a 13x9 inch baking dish with parchment greased with cooking spray.
  • Prepare the cake mix according to package instructions and transfer it to the prepared dish.
  • Bake according to package instructions, then let the cake cool completely on a wire rack.

Blueberry Layer

  • In a small saucepan, simmer blueberries, lemon juice, and sugar over medium heat until thickened, about 5-7 minutes.
  • Allow this mixture to bubble and become syrupy, then pour into a bowl and let it cool.
  • Fold in the whipped topping gently into the cooled blueberry mixture until incorporated.

Frosting

  • In a mixing bowl, beat the cream cheese and softened butter together until fluffy.
  • Add confectioners’ sugar, lemon zest, lemon juice, and vanilla; mix until well combined.

Assembly

  • Once the cake has cooled, poke holes all over the surface with a skewer.
  • Pour the blueberry mixture over the cake, letting it soak into the holes.
  • Spread the frosting over the top and garnish with fresh blueberries and lemon zest.

Notes

Consider adding fresh herbs for extra flavor. You can also substitute Greek yogurt for some butter in the frosting for a healthier option. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
