Preparation

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.
  • In another bowl, combine the melted butter, brown sugar, and 1/4 cup honey, stirring until smooth. Beat in the eggs one at a time, then mix in the vanilla extract and Greek yogurt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Baking

  • Gently fold in the chopped walnuts, chopped pistachios, and orange zest.
  • Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Finishing Touches

  • Once cooled, drizzle each muffin with 1/3 cup honey and sprinkle with additional chopped pistachios.

Notes

Measure accurately and allow ingredients to sit at room temperature. Do not overmix; a few lumps are okay.
