Preparation

  • Add the chopped dark chocolate to a heatproof bowl.
  • In a small saucepan, heat the heavy cream over low to medium flame until it just begins to simmer.
  • Pour the hot cream over the chocolate and let it sit for about two minutes.
  • Stir the mixture until smooth, ensuring all chocolate is melted. Add coconut oil and vanilla extract if using.
  • Gently fold in the chopped hazelnuts and crispy rice cereal.
  • Cover the bowl with plastic wrap and refrigerate for 1 to 2 hours.

Forming Truffles

  • Once chilled, scoop and roll the mixture into 1-inch balls.
  • Place the truffles on a parchment-lined tray and sprinkle with flaky sea salt.
  • Chill for another 15 to 20 minutes before serving.

Notes

Ensure to melt chocolate gently to avoid burning. You can roll the finished truffles in cocoa powder or shredded coconut for variations. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
