Preparation

  • In a small heatproof bowl, microwave the chopped semisweet chocolate in 30-second increments, stirring between each until melted and smooth (about 90 seconds). Let it cool slightly.
  • In a food processor or mini blender, add the cottage cheese and blend until creamy.
  • Add the melted chocolate and sweetener (if using) to the cottage cheese and blend until well combined, scraping down the sides as necessary.
  • Transfer the mousse to a container with a tight-fitting lid and refrigerate for at least one hour to set.
  • Serve topped with additional chopped chocolate and fresh berries.

Notes

For an enhanced chocolate flavor, add a pinch of sea salt to the melted chocolate. Whip the cottage cheese for a lighter texture, and feel free to experiment with different types of chocolate. For a vegan option, use plant-based yogurt and dairy-free chocolate.
