For the Filling

  • 1.5 cups mascarpone or cream cheese For a rich, creamy layer.
  • 1 cup heavy whipping cream To lighten the filling.
  • 0.25 cup powdered sugar To sweeten the cream.
  • 1 tsp vanilla extract For the cream filling.

For the Raspberry Topping

  • 1.5 cups fresh or frozen raspberries Juicy and tangy.
  • 0.25 cup sugar For raspberries.
  • 1 tbsp cornstarch To thicken the mixture.
  • 2 tbsp water
  • 1 tsp lemon juice To brighten the flavors.

For Garnish

  • to taste chopped roasted pistachios For a nutty crunch.
  • to taste whipped cream or mascarpone For finishing the presentation.

Instructions
 

Preparation

  • Preheat the oven to 175°C (350°F). Grease and line two 8-inch round cake pans.
  • In a food processor, pulse the unsalted pistachios until finely ground.
  • In a large bowl, whisk together the all-purpose flour, baking powder, salt, and ground pistachios.
  • In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla and almond extracts.
  • Gradually add the dry ingredients and buttermilk, mixing just until combined.
  • Divide the batter between the prepared pans and bake for 25-30 minutes. Allow to cool completely.

Filling and Topping

  • For the raspberry filling, cook raspberries, sugar, cornstarch, water, and lemon juice over medium heat until thickened. Cool completely.
  • Beat mascarpone with powdered sugar and vanilla until smooth. Whip the heavy cream until stiff peaks form, then fold into the mascarpone.

Assembly

  • If desired, slice the cooled cake layers in half. Spread cream filling on the bottom layer, then raspberry filling. Place the second layer on top.
  • Add any remaining cream filling on top. Garnish with chopped pistachios and whipped cream.

Notes

Ensure all ingredients are at room temperature for better mixing. Don't skip the cooling step for the cake layers. For variations, consider using whole wheat flour or substituting Greek yogurt for mascarpone.
