Preparation

  • Preheat your oven to 350°F (175°C). Lightly spray a 9" x 13" baking dish with nonstick cooking spray.
  • In a large bowl, combine the cooked white rice, green chilies, 1½ cups of shredded cheddar cheese, sour cream, garlic powder, salt, and pepper. Mix until well combined.
  • Spread the rice mixture evenly into the prepared baking dish and top it with the remaining cheddar cheese.

Baking

  • Bake for about 20 minutes, until the casserole is bubbly and the cheese is melted and golden brown.
  • Let it cool for 10 minutes before serving. Garnish with chopped parsley or cilantro.

Notes

For extra flavor, add cooked chicken or beans. For more heat, use spicy green chilies or hot sauce. Experiment with different cheese types.
