Instructions
 

Preparation

  • In a large bowl, beat the softened butter, brown sugar, and molasses together until the mixture becomes fluffy and light, around 2 minutes.
  • Add the egg and pure vanilla extract, mixing until fully combined until the mixture looks smooth and creamy.
  • In a separate bowl, whisk together the all-purpose flour, ground ginger, baking soda, ground cinnamon, ground cloves, ground nutmeg, and kosher salt.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed to prevent flour from flying everywhere.
  • Optionally, add fresh ginger, orange zest, or black pepper to the dough and incorporate well.
  • Divide the dough into portions, wrap in plastic wrap, and chill for 2-3 hours.

Baking

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Roll out the chilled dough to 1/4 inch thickness and use cookie cutters to cut out shapes.
  • Bake in the preheated oven for 9-10 minutes until slightly puffed and set, with firm edges and soft centers.
  • Cool cookies on the baking sheets for 5 minutes before transferring to a cooling rack.
  • Once cooled, decorate with icing and sprinkles.

Notes

Chilling the dough is vital for cookie shape; use parchment paper to prevent sticking and ensure even baking. Make sure not to overbake to maintain chewiness.
