  • 1 cup heavy cream Provides a smooth consistency.
  • 2 Tbsp balsamic vinegar Brightens the flavors.
  • 1 Tbsp chopped fresh parsley Adds color and aroma.

  • Extra-virgin olive oil For drizzling over garlic before roasting.

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Drizzle olive oil over garlic, wrap in foil, and bake until golden and soft, about 45 minutes.
  • Peel and cut Red Bliss potatoes, cover with water in a pot, and add salt.

Cooking

  • Bring the pot to a boil and cook until potatoes are tender, about 30 minutes.
  • Drain the potatoes and mash until smooth.
  • Mix in melted butter, heavy cream, and roasted garlic.
  • Add balsamic vinegar and salt to taste.

Serving

  • Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, add freshly ground black pepper or Parmesan cheese. For chunkier potatoes, mash less thoroughly. Try incorporating roasted herbs for a twist. Leftovers can be stored in the refrigerator for up to three days, and can be reheated with added cream or milk to restore creaminess.
