Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, toss the halved baby potatoes with olive oil, salt, and pepper until well-coated. Lay them out on a baking sheet in a single layer.

Cooking the Potatoes

  • Roast the potatoes in the preheated oven for 25-30 minutes, turning halfway through for even crispness.

Cooking the Steak

  • In a large skillet over medium-high heat, melt the unsalted butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the cubed sirloin steak to the skillet, sear for 3-4 minutes until browned and cooked to your desired doneness. Season with salt and pepper.

Serving

  • Plate the steak bites alongside the crispy potatoes, and sprinkle with chopped parsley before serving.

Notes

Ensure your skillet is preheated for a good sear. Avoid overcrowding the skillet and let the steak rest briefly to keep it juicy. You can marinate the steak in advance for deeper flavors.
