Preparation

  • Trim the skirt steak to fit your skillet and pat it dry with paper towels. Season both sides generously with salt and pepper.
  • Heat a small amount of oil in a large skillet over medium-high heat until it’s hot and shimmering.

Cooking

  • Add the seasoned skirt steak to the pan, letting it sear for 2-3 minutes on each side until it reaches medium-rare.
  • Remove the steak from the skillet and let it rest on a cutting board.
  • In a separate skillet, melt the butter over low heat.
  • Add the minced garlic and cook until golden brown.
  • Once the steak has rested, slice it against the grain and drizzle garlic butter over the slices.
  • Garnish with freshly chopped parsley before serving.

Notes

Consider marinating the skirt steak before cooking for added flavor. Don't rush the resting process to maintain juiciness. Mixing lemon juice into the garlic butter can add a refreshing twist.
