Preparation of Crust

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the flour, granulated sugar, and kosher salt.
  • Gradually add in the melted butter and almond extract, stirring until a soft dough forms.
  • Press this dough evenly into a 10-inch tart pan, covering the bottom and sides.
  • Prick the crust several times with a fork to prevent steam bubbles.
  • Bake for 20-25 minutes or until golden brown. Let it cool completely.

Preparation of Filling

  • In a medium mixing bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, mix the mascarpone cheese and cream cheese until smooth.
  • Gently add in the powdered sugar and fresh lemon juice, mixing until no lumps remain.
  • Slowly fold in the whipped cream to maintain an airy texture.

Assembly

  • Spread the filling evenly over the cooled crust.
  • Artfully arrange the fresh fruits on top of the filling.
  • Heat the apricot preserves with a splash of water until warm and easy to brush.
  • Glaze the fruits with the apricot preserves and chill the tart for at least two hours before serving.

Notes

Ensure all ingredients are at room temperature for smoother mixing. Allow tart to chill adequately to prevent a soggy base.
