Ingredients
  

For the Base

  • 1 Tbsp. extra-virgin olive oil For sautéing the vegetables
  • 1 small onion, diced To add aromatics
  • 2 cloves garlic, minced Provides flavor
  • 2 cups baby spinach Adds color and nutrition
  • Kosher salt, to taste For seasoning
  • 8 large eggs Base of the frittata
  • 2 tsp. dried oregano Enhances flavor
  • 2 Tbsp. skim milk Adds moisture to the eggs
  • Freshly ground black pepper, to taste For seasoning

For Topping

  • 1.5 cups marinara sauce Base sauce for the frittata
  • 0.5 cup shredded mozzarella cheese For melting on top
  • 0.25 cup sliced turkey pepperoni Adds crunch and flavor

Instructions
 

Preparation

  • Preheat the oven to 425°F.
  • In a medium oven-proof skillet over medium heat, heat the olive oil.
  • Add diced onion and minced garlic to the skillet. Cook until tender, about 5 minutes.
  • Add spinach and season with salt. Stir until the spinach wilts.
  • In a large bowl, whisk together eggs, dried oregano, skim milk, and marinara. Season with salt and black pepper.

Cooking

  • Pour the egg mixture over the sautéed vegetables. Cook until the edges are firm, about 4 to 5 minutes.
  • Top with cheese and turkey pepperoni, then transfer to the oven.
  • Bake until the eggs are fully set and the cheese is bubbly, about 5 to 6 minutes.
