Ingredients

  • 16 ounces package of gnocchi For signature pillowy texture.
  • 2 large eggs Used for binding.
  • 2/3 cup Italian-style bread crumbs For that perfect crunch.
  • 1/3 cup grated Pecorino Romano cheese Adds a savory touch.
  • 3 tablespoons all-purpose flour Helps with coating.
  • kosher salt To enhance flavors.
  • freshly ground black pepper Brings warmth and depth.
  • peanut or vegetable oil For frying.
  • finely chopped fresh parsley For garnish.
  • store-bought or homemade marinara sauce For serving.

Instructions
 

Preparation

  • In a large pot of boiling salted water, cook the gnocchi until al dente according to package instructions. Drain and rinse with cold water. Let cool.
  • Whisk the eggs in a shallow bowl with salt and pepper. In another dish, mix bread crumbs and Pecorino Romano.
  • Sprinkle flour over the cooled gnocchi. Toss to coat and season with salt and pepper.
  • In a skillet, heat oil over medium heat.

Frying

  • Dip gnocchi in the egg mixture, then in the bread crumbs. Fry in batches until golden brown, about 2-3 minutes.
  • Drain on paper towels, sprinkle with salt, top with more Pecorino and parsley.
  • Serve with marinara sauce.

Notes

For an even crispier texture, consider double-coating your gnocchi by dipping them back into the egg mixture and then into the bread crumbs for a second time before frying. You can mix in Italian herbs or garlic powder into the bread crumbs for added flavor.
