  • ½ teaspoon vanilla extract For additional flavor

Serving Toppings

  • assorted berries For freshness
  • powdered sugar For elegance when serving
  • maple syrup For drizzling

Instructions

Preparation

  • Separate the eggs into yolks and whites, ensuring no yolk mixes with the whites.
  • In a mixing bowl, whisk the egg yolks with the milk, vanilla extract, and optional lemon zest until just combined.
  • Gradually add in the flour and baking powder, mixing until the batter is smooth and free of lumps.
  • In a separate bowl, beat the egg whites until soft peaks form, then gradually add the sugar and continue to beat until stiff peaks form.
  • Gently fold the whipped egg whites into the yolk mixture, maintaining the airiness.

Cooking

  • Heat a non-stick skillet over low heat and brush it lightly with oil.
  • Spoon the batter into the skillet to form tall piles, cover with a lid to steam and rise the pancakes.
  • Cook for about 4-5 minutes, or until the bottoms are golden. Carefully flip the pancakes and cook for an additional 4-5 minutes.

Serving

  • Serve the pancakes warm, topped with sweetened whipped cream, fresh berries, a sprinkle of powdered sugar, and maple syrup.

Notes

Avoid overmixing the batter to prevent denser pancakes. Patience is key for fluffiest results. Also consider substitutions for healthier alternatives.
