Ingredients
  

Custard Base

  • 2 cups store-bought or homemade eggnog Creamy and spiced, providing the iconic flavor.
  • 3/4 cup whole milk Adds smoothness and richness to the custard.
  • 7 large egg yolks Essential for creating the custard’s silky texture.
  • 1/2 tsp. kosher salt Enhances the overall flavor balance.
  • 1/4 cup granulated sugar Sweetens the custard to perfection.
  • 1 tsp. pure vanilla extract Infuses a lovely aromatic essence.
  • 1/2 tsp. ground cinnamon Gives a warm, cozy flavor.
  • 1/2 tsp. ground nutmeg Complements the eggnog beautifully.

Brûlée Topping

  • 3 tbsp. granulated sugar (for brûlée) Creates that irresistible, crispy top layer.
  • 3 tbsp. bourbon whiskey (optional) Adds depth and warmth (omit for an alcohol-free version).

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a medium saucepan, warm the eggnog and milk over medium heat until hot but not boiling.
  • In a large mixing bowl, whisk together the egg yolks, kosher salt, and 1/4 cup of sugar until the mixture becomes thick and pale.
  • Gradually whisk the warm eggnog and milk mixture into the egg yolk mixture slowly to temper the yolks and prevent them from scrambling.
  • Strain the combined mixture into a bowl to remove any lumps, then stir in the bourbon (if using), vanilla, cinnamon, and nutmeg.
  • Carefully pour the custard into individual ramekins.

Baking

  • Place the ramekins in a baking pan and fill the pan with boiling water until it reaches halfway up the sides of the ramekins.
  • Bake the custards for about 30 minutes, or until the edges are set but the center remains slightly jiggly.
  • Take them out and let them cool in the water bath for 15 minutes.
  • Once cooled, transfer the ramekins to the refrigerator and chill for at least 2 hours.

Finishing Touch

  • Before serving, sprinkle the remaining 3 tablespoons of granulated sugar evenly over the top of each custard.
  • Use a kitchen torch to caramelize the sugar, creating a beautifully crispy crust on top.

Notes

For the best results, consider using fresh eggnog and high-quality vanilla extract. Chill overnight for an even richer flavor. The sugar should be caramelized right before serving to maintain texture.
