Preparation

  • Heat the oil in a large skillet over medium heat until it shimmers.
  • Add the rice and cook, stirring constantly until it turns a light golden brown.
  • Push the rice aside and add the onion, cooking until softened, then stir in the garlic and cook for another minute.

Cooking

  • Mix the rice with the onion-garlic mixture, then add the chicken broth, tomato sauce, cumin, and salt. Bring to a gentle boil.
  • Reduce heat to low, cover, and let simmer for 25-35 minutes until the rice absorbs the liquid.
  • Fluff the rice with a fork, season to taste, and garnish with cilantro if desired.

Notes

Rinse rice before cooking for fluffiness. Use homemade chicken broth for more flavor. Add jalapeños or chili powder for a kick.
