  • ½ cup enchilada sauce (divided)
  • 8-10 pieces tortillas (corn or flour) Soft and pliable vessel for filling.
  • 2 cups shredded cheese (Mexican blend, cheddar, Monterey Jack, or preferred) Creamy and melty for that irresistible gooeyness.
  • ½ can black beans (drained, optional) Adds texture and flavor.
  • 1 can diced green chilies (optional) Offering a delightful kick.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a 9×13” baking dish.
  • In a skillet over medium-high heat, cook the ground beef and onion until the beef is no longer pink and the onions are tender, about 5 to 7 minutes.
  • Stir in the taco seasoning and half a cup of enchilada sauce, adding the black beans or green chilies if using, and let the mixture simmer for about 2 minutes.
  • Warm tortillas in a microwave or skillet until pliable.

Assembly

  • Spoon about a quarter cup of the beef filling into each tortilla, add some cheese, and roll tightly.
  • Place each rolled tortilla seam-side down in the prepared baking dish.
  • Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.

Baking

  • Cover with foil and bake for 15 minutes.
  • Uncover and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  • Let sit for 5 minutes to cool slightly before serving.

Garnishing

  • Garnish with chopped cilantro, sour cream, diced tomatoes, and sliced green onions before serving.

Notes

For best results, ensure that the ground beef is fully cooked and the onions are tender. Avoid overcrowding your skillet, and don't skimp on the cheese.
