Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C).
  • Pat the chuck roast dry and season generously with salt and pepper.
  • Heat olive oil in a Dutch oven over medium-high heat. Add the roast, searing each side for 5-7 minutes until a golden brown crust forms, then set aside.

Cooking

  • Reduce the heat to medium-low and add onion and celery. Cook for 8-10 minutes until softened.
  • Stir in the garlic, tomato paste, and Worcestershire sauce; cook for an additional minute.
  • Deglaze the pot with chicken stock, scraping the bottom to lift all those flavorful bits. Return the roast to the pot, cover tightly, and braise in the oven for about 2 hours.
  • Add the potatoes and carrots to the pot, cover again, and continue cooking for an additional hour or until all ingredients are fork-tender.
  • Remove the roast and veggies. Thicken the gravy with cornstarch mixed with cold water before serving.

Notes

To elevate your pot roast, let the meat come to room temperature before cooking, and do not skip the searing. Fresh herbs like thyme or rosemary can enhance flavor.
