Preparation

  • Gather all your ingredients and ensure your coconut cream is well-chilled.
  • In a large mixing bowl, combine the shredded coconut, melted coconut oil, coconut cream, honey or maple syrup, and vanilla extract.
  • Stir the mixture thoroughly until it becomes a homogeneous mass.
  • Gently fold in the fresh raspberries, being careful to keep them whole.
  • With clean hands, scoop out a tablespoon-sized portion of the mixture, rolling it between your palms to form a smooth ball.
  • Pour some extra shredded coconut onto a plate and roll each coconut ball in it, ensuring each ball is generously coated.
  • Place the coconut balls on a parchment-lined plate and refrigerate for at least 30 minutes.

Notes
