Preparation

  • Place the boneless, skinless chicken breasts in the bottom of your crockpot.
  • Pour the chicken broth over the chicken.
  • Add the diced tomatoes, heavy cream, Italian seasoning, minced garlic, along with salt and pepper to taste. Stir gently to combine.

Cooking

  • Cook on low for 6–8 hours or on high for 3–4 hours.
  • Once the chicken is cooked and tender, shred it with two forks right in the crockpot.
  • Stir in the grated Parmesan cheese until it melts.
  • Serve hot and garnish with fresh basil if desired.

Notes

To thicken soup, add a cornstarch slurry during the last hour. Substituting proteins or adding vegetables can enhance the dish. Serve with garlic bread or salad.
