  • 2 cups leftover mashed potatoes Can use flavored mashed potatoes for extra taste.
  • 1 cup favorite cheese (sharp cheddar or mozzarella) Cheddar, mozzarella, or any cheese that melts well.
  • 1 cup panko breadcrumbs For a crispy coating.
  • 2 large eggs For binding the ingredients.
  • to taste salt and pepper Adjust seasoning to your preference.
  • as needed cups oil for frying Use any neutral oil with a high smoke point.

Preparation

  • Preheat oil in a frying pan to 375°F (190°C) or preheat your air fryer to the same temperature.
  • In a large mixing bowl, combine mashed potatoes with salt and pepper. Mix well.
  • Take a small amount of the mixture, flatten it, place a piece of cheese in the center, and mold the potatoes around it to form a ball. Repeat for all balls.
  • Beat the eggs in another bowl for dipping.
  • Dip each ball in the egg mixture, then roll in panko breadcrumbs to coat.

Cooking

  • Fry the balls in hot oil for 4-5 minutes until golden brown or air fry for 10-12 minutes, turning halfway.
  • Allow to cool slightly and serve warm.

Notes

For added flavor, consider using flavored mashed potatoes or trying different types of cheese. Maintain the frying oil temperature for optimal results. They can also be served with marinara sauce or sour cream.
