Preparation

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes with a fork and bake for 45-50 minutes until soft.

Cooking the Filling

  • In a skillet, melt the butter over medium heat.
  • Add the diced apple, cranberries, nutmeg, cinnamon, and salt, cooking for 5-7 minutes.
  • Stir in the maple syrup and cook for an additional 2 minutes.

Assembly and Final Baking

  • Once the sweet potatoes are cool enough to handle, scoop out the flesh and mix it with half of the cranberry-apple filling.
  • Spoon this mixture back into the sweet potato skins and top with the remaining filling.
  • Bake for another 10-12 minutes until heated through.

Notes
