Preparation

  • In a large bowl, using a handheld mixer on medium speed, beat the softened cream cheese and butter together until light and fluffy (about 2 minutes).
  • Gradually add in the confectioners' sugar, brown sugar, and pure vanilla extract, mixing until well combined for a smooth, creamy batter.
  • Gently fold in the mini chocolate chips until evenly distributed throughout the batter.
  • Scoop the cream cheese mixture onto overlapping sheets of plastic wrap and form it into a ball shape, being careful not to compress it too much.
  • Wrap the formed ball tightly in the plastic wrap and freeze it until firm, which should take about 3 hours.
  • While waiting, mix the rainbow and silver sprinkles in a small bowl for a colorful coating.
  • Once the ball is firm, transfer it to a platter and cover it generously with the mixed sprinkles. Serve with Nilla wafers and pretzels for dipping!

To ensure success, make sure your cream cheese and butter are softened properly, don't rush the chilling process, and use a handheld mixer for the best results.
