Instructions
 

Boiling the Eggs

  • Place the eggs in a saucepan, and cover them with cold water by 1 inch. Bring to a boil, then cover and turn off the heat. Let the eggs sit for 10-12 minutes.

Ice-Water Bath

  • Transfer the eggs to a bowl filled with ice water for 2-3 minutes to stop the cooking process and cool them quickly.

Peeling the Eggs

  • Once cooled, gently tap each egg on the counter and peel off the shell. Pat dry with a paper towel for a cleaner look.

Slicing the Eggs

  • Carefully slice each egg in half lengthwise and place the whites on a serving platter, creating a beautiful display.

Preparing the Filling

  • In a mixing bowl, remove the cooked yolks and mash them with the avocado, mayonnaise, Dijon mustard, and sriracha until smooth and creamy.

Seasoning the Filling

  • Add smoked paprika, salt, and pepper to the filling mixture. Stir well until everything is combined, ready for piping.

Piping the Filling

  • Transfer the creamy filling to a piping bag. Carefully pipe the mixture into each egg white, filling them generously.

Garnishing and Serving

  • Just before serving, sprinkle with a touch of smoked paprika and garnish with finely chopped chives. You can serve them immediately or refrigerate for up to 2 hours to let the flavors meld.

Notes

To achieve perfectly boiled eggs, using older eggs rather than fresh ones can make peeling easier. Ensure the eggs have cooled completely before attempting to peel them for a smooth finish. You can adjust the level of sriracha based on your spice preference and experiment with different herbs for garnish, like dill or parsley for variation.
