Instructions
 

Preparation

  • In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and baking soda until well mixed.
  • In a medium bowl, whisk together the eggs, granulated sugar, brown sugar, and melted butter until fully combined.
  • Pour the wet ingredients into the dry ingredients, mixing until just combined.
  • Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours.

Baking

  • Preheat the oven to 350°F (175°C) and arrange the racks in the upper and lower thirds of the oven.
  • Place confectioners' sugar in a small bowl.
  • Scoop about 2 tablespoons of dough, roll into a ball, and then roll in confectioners' sugar—twice.
  • Arrange the balls on two parchment-lined baking sheets, spaced about 2 inches apart.
  • Bake for about 14 minutes, or until puffed and cracked on top.
  • Let cool for a few minutes on the baking sheets before transferring to a wire rack.

Notes

For added flavor, consider adding vanilla extract. You can also fold in chocolate chips or nuts before chilling the dough.
